Snabblagad vegansk medelhavspasta

När jag var i Rom gjorde Swann en pasta med smak av medelhavet som var helt vegansk med undantag av tonfisken som han hade i, så vill man kan man alltså ha i fisk – tonfisk eller kanske makrill skulle passa bra. Men jag gjorde utan fisk och det blir supergott! Hur enkelt som helst, snabblagat och dessutom veganskt.

Ingredienser
Penne-pasta (alltså jag mäter aldrig pasta, jag bara slänger i lite i kastrullen och hoppas att det blir bra och oftast blir det bra. Jag gjorde ganska mycket så det räcker till två stora portioner).
2 tomater alternativt ett par körsbärstomater
1/2-1 gul lök (beror ju lite på storleken)
1 vitlöksklyfta
1 zucchini
Massa olivolja
Nymalen (med betoning på nymalen icke på burk, det smakar ingenting) svartpeppar
Salt
(Färska champinjoner)
(Fisk, exempelvis tonfisk)

How to
Sätt på vattnet till pastan. Medan pastan kokar steker du finhackad lök, pressad vitlök, grovhackad tomat och hyvlad (eller hackad, men jag tycker det är finast med hyvlad!) zucchini i rikligt med olivolja och lite salt. Allt skall bli mjukt och glansigt och oljigt och en härlig doft skall sprida sig! Här kan du slänga i eventuell fisk också om du vill det. Skivade färska champinjoner passar också bra i denna rätt så släng i det också om du har det hemma, men det hade inte jag.
När pastan kokat al dente häller du av vattnet och slänger i pastan med grönsakerna. Häll eventuellt på lite mer olivolja och låt det gossa till sig någon minut. Servera direkt med massa nymalen svartpeppar!

(Wrote this yesterday but publishing it today)
So, today is my only whole day in Rome. Because of going to bed so late yesterday we slept pretty long (not very like me) and then we ate italian breakfast! Which means: go down to the closest bakery and buy some pastries which you eat with tea or coffee. Not very like me either, haha. I told Swann about what I use to eat for breakfast (smoothie with müsli, dark bread with tahini and cucumber and alfalfa) and he thought that really strange…

Then since Swann hade to practice for his freestyle tournament thing in two weeks, I went in to town by myself. I think this is the first time I’m visiting a city/place in another country and explore it all by myself! Swann had made a perfect map with all the important things to see, from Colosseum to the Spanish stairs, so I started at metro station Colosseo and the first thing I saw when I got up from the metro was of course Colosseum! Amazing to see it in reality after seeing it in pictures and movies so many times. Very beautiful building as well of course.

After walking around Colosseum I followed the street down towards Via del corso and passed many historic buildings. Via the walk along Via del corso, I saw Pantheon and the Basilic Santa Maria ad martyres, Fontana di trevi and Trinita di monti. At Fontana di trevi it started to rain so I got inside for some lunch, pizza of course! When I had finished it still hadn’t stopped so I bought coffee as well. When I had drunken that it still hadn’t stopped raining so I bought an umbrella and just as I got out of the store with my new umbrella the rain had stopped…

Well well, nothing to do about that! I kept going along Via del corso to Pantheon and then on to Via del condotti towards Trinita di monti. Via del condotti was like Oxford Street in London; full of fancy stores like Prada, Miu miu, Dolce et gabbana, Dior, Armani and so on. At this point it unfortunately started raining again so my umbrella came to use on the walk back to the metro and way home to Swann. 🙂

It’s a very practical thing having a friend in a new city you’re visiting, because then he/she can show you around and be the guide. Awesome! Yesterday when I had met up with Swann at Termini station, we took the metro to Libia and went to the supermarket to buy some groceries. Pasta, vegetables, tortellini, tomato sauce, mozzarella, foccaccia… (“you need to eat Italian food when you’re here!”). After a little while at home with a late lunch (pizza with a ruccola salad of course!), we went in to the centre in the evening. Visited the third country of the day: the Vatican. So beautiful, and so peaceful to walk around on the cozy streets of Rome, especially when you have a private Italian guide who can tell you everything about every beautiful building that shows up everywhere.

We were home pretty late so it was a late dinner, but a very delicious one! Swann cooked pasta of course, with tomato, zucchini, onion, garlic, tuna and a lot of parmigiana on and one or two glasses of wine as well. Molto bene! Very italian and very good. And Swann did not like that I never have salt in the water when I cook pasta, hahaha. Some pics from the day:

And that was about all from my first day in Rome. What I think about the city so far: very beautiful! And if you wonder what I’m doing here and who Swann is; a very random trip (bought tickets like ten days ago) and Swann I met in Belgrade at New year’s eve and we’ve been keeping contact since so I decided to visit him! Very good decision 🙂

Heeey people, update from the air! Ajjemen, Norwegian har tydligen den lilla finessen att man får wifi på planet. Trevligt! För övrigt också väldigt mycket trevligare att åka med ett “normalt” flygplan från Landvetter istället för Ryanair (eller något motsvarande) från Säve. Landvetter är en mycket trevligare flygplats (började till exempel min lilla tripp med en EH-cappuccino imorse!) och det är inte så jäkla diktatoriskt kring handbagaget. Inga rosa lådor man behöver stoppa ner väskan i för att kolla om den verkligen är i rätt mått och inget nedtryckande av handväska i ryggsäck för att bara få ett handbagage. Ryanair och dess billiga priser i all ära, men det här är bannemej så mycket trevligare.

Inte långt kvar till Rom nu, nice med ett nytt land på kartan! Blir bara världens speed-visit (till torsdag) men skall i alla fall hinna med Colosseum och italiensk pizza 🙂
